Erythritol is used as a type of regular sugar, and because of its similar taste and structure, can be used to replace it. Erythritol’s sweetness corresponds to 60-75% of the sweetness of regular white sugar, so you have to use slightly larger quantities (the recommended sugar:erythritol ratio is 1:1.25).
