The homeland of kombucha is East Asia, where it is still considered a very popular homemade beverage. In China and Japan, it was believed that it brings eternal life, which is why it is also called the ‘Tea of Immortality’ and the ‘Elixir of Life’.
If the claims of its reputation are really that strong can be checked among its sworn fans - who, believe me, aren’t few - but the fact is that it can be extremely refreshing and inspiringly charming when prepared properly.
What is the famous kombucha anyway?
According to some information, the drink earned its name after a Korean doctor Kombu, while the suffix comes from the Japanese word for tea - cha. It is a fermented tea that Dr Kombu prescribed for the Japanese emperor about 415 BC.
Fermentation by ancient methods
The drink is obtained by a traditional fermentation process, which is made possible by a special culture of beneficial microorganisms and yeasts. For fermentation to occur, the tea needs to be sweetened. This does not mean, however, that the drink ultimately contains a lot of sugar. Quite the opposite. As micro-cultures eat the sugar, what is left are various acids with a supposedly beneficial effect on the body.
The process could be roughly compared to making apple cider vinegar, except that in making kombucha we need these very specific cultures, a pancake-like disk of yeast known as scoby. Something similar happens in the preparation of kefir, where special cultures are needed which are linked into a symbiotic ‘mushroom’ that allows fermentation.
Following the Silk Road first to Europe and all the way to Malinca
From Asia, the popular drink first spread to Russia via trade routes, and from there it continued the victorious journey throughout Europe. In particular, it began to gain popularity after 1960, when the Swiss began to compare some of its properties with those of yoghurts.
Today, this mainstream refreshing drink has finally found its way to Malinca.

We used quality Sencha green tea to prepare Malinca's kombucha, as one of the real teas must be used in the traditional preparation of this fermented beverage. To thrive, bacteria need real tea and caffeine, the amino acid L-theanine and other substances contained in the tea.
Because we wanted to capture the quality and benefits of green tea in our beverage, we decided on the top-quality Japanese Sencha. Sencha is namely grown in such a way that it captures more sun, and in this way contains more antioxidants than classic green teas.
Since Malinca’s kombucha would not be what it is without raspberries, we added a completely natural fruit tea mixture after fermentation, which contains lyophilized raspberries and purely natural raspberry aromas. Malinca’s Kombucha is available in a 330 ml can, which additionally safeguards the drink to reach you fresh, clean and undamaged.
If anyone asks you why you drink kombucha
Of course, you can answer that because you heard all the buzz around the positive benefits of this - as it was once called - magic potion.

Can diabetics enjoy the drink?
The drink is also suitable for diabetics, as it contains really little sugar. Sugars are mostly broken down during the fermentation process and therefore have a different effect in the body than if sugar were consumed directly. There is practically no effect on raising blood sugar.
Does it contain theine?
There is less than 2 % theine. It is mostly broken down already in the fermentation process and therefore you will not feel the stimulant effect even if you drink kombucha in the evening.

The drink is great for those who have digestive problems. It has traditionally been used precisely for these purposes, as it contains many natural acids and other substances that are supposed to have beneficial properties.
Does it contain alcohol?
The alcohol content in the beverage is practically negligible. During the fermentation process, ethanol is formed in the first phase with the help of yeasts, but in the second phase, when the second fermentation takes place, good microbes eat it. In this way, the drink is completely safe for everyone, children, adults, pregnant women and the elderly.
Are there really bacteria in the drink?
The drink is indeed made from a symbiotic mixture of bacteria and yeast. These are the so-called good bacteria that are also naturally present in the gut. However, we made sure that the drink was absolutely safe by heating the drink to 74 degrees Celsius. This means that nothing ‘suspicious’ can happen to it and therefore the drink on the way to you is completely safe.
Does the drink contain yeast?
The drink is indeed prepared with the help of a symbiotic culture, of which yeasts are also a part, but the yeasts are eventually taken away, and this is also how the process of further fermentation is interrupted. Yeasts, which might cause problems with bloating, are no longer present in the drink.
When can I drink kombucha?
We can enjoy kombucha at any time of the day. Simply when it suits us. We recommend 1-2 cans a day, but there is nothing wrong with ever drinking less or more.
