Soup of red lentils and leeks
INGREDIENTS:
* 350 g of leeks
* 100 g of red lentils
* 3 cloves of garlic
* 1 potato
* 1 small onion
* Fresh chives
* Salt and pepper
* Coconut oil
METHOD: Wash the leek well and slice it. Peel the potatoes and onions and slice them both thinly. Fry the ingredients in coconut oil until slightly golden. Rinse the red lentils under water and add it to the ingredients. Peel the garlic, coarsely chop it and add to the pot, then pour hot water over it to cover all the ingredients. Cook for about 20 minutes to soften all the vegetables. Then blend the soup with a hand blender until the soup is creamy in texture. Add salt and pepper to taste, sprinkle with chopped chives and serve hot.
