Spelt gnocchi with carrot sauce
Simple spelt gnocchi with cottage cheese and carrot sauce, which are also suitable for toddlers. Quickly prepared and delicious - a culinary delight for the whole family.
INGREDIENTS for 2 servings:
Gnocchi:
* 300 g soft curd cottage cheese
* 140 g of white spelt flour
* 1 teaspoon of salt
Sauce:
* 300 g of carrots
* 2 cloves garlic
* 1/2 teaspoon turmeric
* fresh chives
* 2 tablespoons cooking cream
* coconut oil for baking
* salt
*pepper
METHOD: Peel the carrots and slice it thinly. Fry it in coconut oil to give it a little colour, add the peeled garlic so it develops its distinctive smell. Season with turmeric, salt and pepper. Add 2 dl of water and cook for up to 15 minutes or so long that the carrot softens.
Prepare the gnocchi by mixing all the ingredients in a bowl and knead them into a dough on the counter with your hands. Using flour, make 2 large rolls and cut them into gnocchi. Boil in hot water for a few minutes until they float to the surface and a little more, then drain and place on a plate.
Blend the carrots with a hand blender into a smooth paste, add a little water if necessary. Then add the cooking cream, cook for a minute, stir in the chopped chives and pour the sauce over the gnocchi. Serve warm.
