Chicken Curry

INGREDIENTS for 4 people:
* 300 g of rice
* 500 g broccoli
* 1 can of coconut milk
* 1 can of chickpeas
* spices: a mixture of curry spices, salt, cayenne pepper, parsley, garlic and cumin
* 1 leek or onion
* 4 carrots
* 500 g chicken, previously marinated in soy sauce for at least 30 min (for the vegan version you only omit meat)

METHOD: First, cut all the vegetables and meat into desired pieces. Then cook the rice and broccoli separately in slightly salted water. Fry the leeks, carrots, garlic and chickpeas in olive oil. Add salt, pepper and cumin and fry for another few minutes. Reduce heat and add coconut milk and remaining curry spices, salt as needed and fresh parsley. Mix everything well and leave on the fire for at least 10 minutes for the spices to release their flavor well. In a separate pan, fry the marinated chicken. Once cooked, add the meat into the curry or serve it on top.
