* 120 g wholemeal biscuits
* 60 g butter
* 400 g cream cheese (cheese spread)
* 100 g of erythritol (or any other sweetener)
* 200 g sour cream
* 100 ml of whipping cream
*2 eggs
* 2 tablespoons white wheat flour
* a pinch of vanilla powder
* ¼ lemon juice

METHOD:  Preheat the oven to 180 degrees Celsius (ventilation). Prepare a cake pan with a diameter of 18 cm.

Put the biscuits into a blender and pour the melted butter over them. Grind thoroughly. Spread the biscuit base on the bottom of the baking tin and press down with your fingers to get a firm bottom layer.

In a large bowl, whisk together the cream cheese and sweetener. Gradually add the ingredients and slowly stir them into the cream. Pour the cream over the biscuit mass and place in the oven.

First, bake at 180 degrees for 30 minutes, then reduce the oven temperature to 140 degrees and bake for another 40 minutes. Turn off the oven and leave the cheesecake in the oven for another 60 minutes.

Serve the cheesecake plain, with a scoop of ice cream or with fresh berries. You can also prepare a mix berry sauce. Mix a cup of berries, 1 teaspoon of cognac glucomannan and add a little sweetener.
