Carb-free rice with shrimp
INGREDIENTS for 3 people:
* 300 g of fresh cleaned shrimp without tails
* 200 g broccoli
* 1 carrot
* 1 onion
* 1 clove of garlic
* 2 peeled tomatoes
* 2 packages of carb-free rice
* Olive oil
* Salt
* Pepper
* Parsley
METHOD:
1. First wash the shrimps and fry them a little in a hot skillet.
2. Set the shrimps aside in another bowl.
3. Chop the onion and garlic. Fry the onion until glazed and add the garlic just before you finish frying.
4. Next add the sliced peeled tomatoes. First, fry them a little, then let it simmer on low heat to release the water.
5. Meanwhile, peel and slice the carrots and wash the broccoli.
6. Add the broccoli and carrot to the tomatoes. Cook for another 10 minutes.
7. Finally add the fried shrimp, spices and chopped parsley.
8. Rice: Bring salted water to a boil and add carb-free rice and cook for 3 minutes.
9. When the rice is cooked, add it to the pan with the prepared sauce and stir thoroughly.
