Psyllium (Latin: Plantago ovate) comes from India, where it is also most extensively cultivated today. It produces small seeds. When soaked in liquid, the water soluble seed husks form a slimy gelatin-like substance. Psyllium is high in dietary fiber (over 85%). High content of dietary fiber has a beneficial effect on digestion. Dietary fiber is a carbohydrate, but since it cannot be digested by the body, it has virtually no caloric value but nevertheless imparts a sense of fullness. When taking psyllium, it is very important to drink plenty of liquid.
How's your digestion? When ingested, psyllium swells in the intestine and forms a mucus, a gelatinous substance that affects digestion and metabolism. As the psyllium travels through the body, it cleanses at the same time. This creates a favorable breeding ground for beneficial digestive bacteria.
Lose weight with psyllium. The fibers reach the colon without being chemically broken down or absorbed in the small intestine, while giving a feeling of satiety.
Natural solution for constipation. It creates a gelatinous gel in the stomach that travels through digestive tract, binding the remnants. The gel stimulates intestinal peristalsis, making the stool softer and thus much easier to excrete.
Cook with psyllium. Due to the gelatin produced by soluble fiber, psyllium is very useful in cuisine. Due to its gelatinous structure, it can be used to prepare various jellies made from fruits and berries. In small quantities, it is also great for making raw cakes, thickening fillings that are too runny. It can be mixed into drinks and fruit purees or used in soups, stews, vegetable purees or even in meatloaf instead of bread or breadcrumbs.
Psyllium is also great in baking. It is a common ingredient in gluten-free baking, because it forms a gel when combined with a liquid, giving the baked goods a better texture, light crumb, more moisture and a less crumbly texture. It is excellent in cakes, pastries, pancakes, bread, pizza and pasta doughs.
