Spelt is an ancient type of wheat that is considered as one of theancient grains. It use was first recorded 9,000 years ago and it has been regarded as a treasure trove of health across Europe and Asia.
Spelt has a double husk that cannot be removed only by threshing, but requires a special removal process. This husk prevents pesticides, fungicides and other harmful substances from affecting the grain, retaining its quality. Due to its pesticide resistance, spelt has a low yield per hectare, which is why its cultivation has almost stopped in the past.
Since spelt was preserved in its original non-hybrid form, its nutritional value remained rich. It is one of the cereals with the highest protein content, but its protein differs in structure from wheat protein. Compared to wheat, baked goods made with spelt are more tough and dense, as spelt has less protein than wheat.
Wholegrain spelt semolina is obtained in the process of milling spelt flour. It can be eaten as a healthy breakfast or used as thickener in soups or in desserts.

Cook it in boiling water or milk for 10 to 15 minutes. It is simple to prepare and can be eaten for breakfast, dinner, dessert or as a side. Unlike instant semolina, spelt semolina is not pre-treated, so the cooking time is slightly longer.
