Cinnamon is a delicious and indispensable spice that comes from Sri Lanka. Its origin (cinnamon is obtained from the bark of the cinnamon tree) has long been unknown, as cinnamon suppliers wanted to retain the monopoly. It was brought to Europe by the crusaders and then quickly spread as a popular aphrodisiac. Today, cinnamon is considered to be one of the most common and popular spices.
Not all cinnamon is created equal
There are two types of cinnamon - the more common cassia or Chinese cinnamon, which is known to most, and Ceylon cinnamon. Ceylon cinnamon is rarer and therefore more expensive. It comes from Sri Lanka, is lighter in color and has a sweeter and more sophisticated multi-layered aroma, while cassia is more intense and spicy. Unlike regular cassia cinnamon, Ceylon cinnamon contains less coumarin. If cinnamon is consumed in larger quantities, it is advisable to use Ceylon cinnamon.
Cinnamon can be added to just about dish as it is extremely versatile.
