Spinach (vegan) pie
INGREDIENTS for 1 round baking tray:
For the dough:
* 1.5 cups of spelt flour
* 0.5 cups of coconut oil
* teaspoon of salt
* water (go by feel)
For the filling:
* 300 g of spinach
* 200 g tofu
* 3 tablespoons yeast flakes
* teaspoon of salt
* tablespoon soy sauce
* 0.5 dl soy cream
* cup of warm water
METHOD: Mix all the ingredients for the dough with a wooden spoon, then knead it with your hands and let it sit in the fridge for one hour. As you might know, I am always short on time so I put it in the freezer for 10 minutes and it was just as fine ☺️. Transfer the dough into a round baking pan (I used silicone), press it well on the bottom and along the edges, prick with a fork and bake at 180 C for 15 min. In the meantime, prepare the filling - blanch and then chop the spinach, and blend all the other ingredients smoothly in a blender. The mixture is then mixed with spinach and, if necessary, seasoned. Already the unbaked taste of the filling is divine. Add the filling to the half-baked dough and bake together at 200 degrees for 25 minutes.
COOKS IN 15 minut for preparation & 40 min baking
