Raw cake

A divine and raw cake that doesn't take more than 15 minutes to make and consists of 3 layers. You can also adjust certain ingredients as you like (use spelt instead of oatmeal, or use almond flour instead of coconut flour, or use only one type of seed instead of a mixture of seeds). You can also customize the fruit in the cake - use your favourite fruit or fruit you have at home.

INGREDIENTS:

Base:
* 2 dcl of water
* 100 g mix seeds (sesame, flax, sunflower)
* 100 g of oatmeal
* 50 g coconut sugar
* 100 g finely ground coconut flour
* 100 g of dates, pre-soaked in water for at least 1 hour
* 1 tablespoon coconut oil

Fruit:
* 2 bananas
* 350 g of strawberries
* 150 g raspberries

Chocolate cream:
* 200 g of dates pre-soaked in water for at least 1 hour
* 50 g 100 % fresh cocoa powder
* 2 dcl of water
* 3 tablespoons coconut oil

Topping: raspberries

METHOD: First, mix the dates and water in a blender. Then add all the other ingredients for the base - put the wet ingredients below and the dry ones above. If the mixture is too dry, add a little more water. Place the mixture in a cake pan (I used a diameter of 28 cm) and spread it on the bottom of the pan.

Then cut the strawberries and bananas into rings. First, place one layer of bananas on the base, and follow with a layer of strawberries and raspberries on top.

For the cream first, mix the dates and water in a blender. Add cocoa powder and coconut oil and mix everything well to get a smooth texture. If the cream is too thick, add a little more water. Pour the mixture over the fruit.

Decorate the cake with raspberries or as you like. Place the cake in the refrigerator for at least 60 minutes before serving. The cake can stay in the fridge for about 3 days, although it will probably disappear sooner :)
