Spelt crepes with chocolate and strawberry topping

INGREDIENTS (for 6 pancakes):

Batter:
* 150 g of white spelt flour
* 3 dl of milk
* 2 eggs
* a pinch of Himalayan salt
* 1 tablespoon coconut oil for baking pancakes

Ingredients for chocolate topping:
* 100 g of dates
* 2 tablespoons 100 % cocoa

Ingredients for strawberry topping:
* 100 g of strawberries
* 1 teaspoon cognac glucomannan
* 1 tablespoon erythritol – zero-calorie sweetener

METHOD: Mix the pancake ingredients in a blender. Bake the pancakes in coconut oil.

Blend the ingredients for the chocolate filling with a hand blender.

Rinse the strawberry ingredients, add the sweetener and cognac glucomannan and blend with a hand blender.
