Zucchini sauce
The light zucchini sauce is easy and quick to prepare. It is excellent in the company of gnocchi or pasta.
INGREDIENTS:
* 1 large courgette
* half an onion
* 2 cloves garlic
* 100 ml sour cream
* olive oil
* salt
* pepper
* fresh parsley
METHOD:
1. Wash and grate the zucchini. Add salt to the grated zucchini and let it drain.
2. Chop half of the onion and garlic.
3. Heat the olive oil in a pan and fry the onions.
4. Add the grated zucchini to the fried onions and stir.
5. Add garlic, pepper and, if necessary, salt to the pan.
6. Pour with water (about 1dcl).
7. Cook the zucchini over moderate heat, at the end add sour cream and fresh parsley and stir.
